Does anyone know how much of them are still in service?

Afaik, all 16 sets are still in service.

There are three dedicated Hikari RailStar services per day with two UP (Hikari RailStar 440 & 442) and one DOWN (Hikari RailStar 443) service. The rest of the trains is used on Kodama services.

Hikari RailStar 440 leaves Hakata at 06:00 in the morning, so it was super empty when I rode it. The 442 follows at 06:16 and the 443 is leaving Shin-Osaka at 20:38.
