Are the tracks removeable, so I can use Peco track

They are, although you’d have to raise Peco track up to the correct height. The building has a base so the rail sits higher than standard unitrack. Essentially the same height as the turntable and it’s accessory rails. The floor of the round house also comes up to roughly the same level as the top of the Unitrack rail and fits flush to the 9mm width. 

 

I’m not really sure what advantage this Roundhouse would be if you’re not using the Kato turntable and stub tracks. If you are, I’d be inclined to use the included pit tracks inside the Roundhouse. If you’re not using the Kato turntable and want to use Peco, i’d probably look for a more appropriate model for use with flexi track.
