Not as cool as that but years ago I went to a "conveyor belt" sushi place near Nagoya that served up the special orders via a Shinkansen looking train that ran separately from the normal belt.

My favorite sushi service still not a train one, it was just outside Monterey Bay Aquarium Years back. It used a moving waterway and the trays were sea otters on their backs and sushi plates resting on their bellies.
